Clean eating. It seems to be a trend and I can tell you right now I’m not a strict follower but I do try my best to eat well. My main problem is that although I like cooking, I don’t always have the time I want to cook. Here is a really tasty but easy breakfast recipe that only took me 15 minutes!

What you will need:
1 x Large ripe avocado
2 x Medium Eggs
Pinch of salt
For garnishing: Ground Mixed Spice and Mixed Herbs
For Serving: 2 x slices of wholemeal bread
Step 1: Preheat oven on 200°C. Remember that if you have a fan based oven you can put it on a lower setting as food can cook faster with these oven types.
Step 2: Cut avocado in half and remove large seed.
Step 3: Crack one egg into one half of avocado and repeat for the remaining egg and avocado half. Try not to break the yolk.
Tip: This is where things can get really messy! If you can’t crack an egg without shells it’s probably best to crack it in a bowl before adding into the avocado. Also, use your own judgement – if the eggs you have a large or the hole isn’t big enough, use a knife to carve a bigger hole.

Step 4: Place the avocado in a non-stick oven proof bowl and leave for 10 – 12 minutes. Once the eggs are cooked, leave to cool for 3 minutes.
Step 5: This is the fun bit! I like to garnish mine with spices and herbs but you could add bacon or sausage bits to make it a real brunch feel or grill tomatoes as a vegetarian option. Serve with sliced wholemeal bread.

Et voila! Quick and easy
